Microgreens are significantly more nutrient-dense than their mature counterparts. According to a study published in the Journal of Agricultural and Food Chemistry, microgreens have higher levels per gram of essential nutrients such as vitamin C, vitamin E, and vitamin A compared to full-sized leafy vegetables and herbs. This study analyzed 25 different microgreens and consistently found them to be more nutrient-rich than mature crops (Penn State Extension)(Microgreens World).
Additionally, research from the University of Maryland revealed that microgreens can be four to 40 times more nutrient-dense than their mature counterparts. For instance, red cabbage microgreens were found to contain 40 times more vitamin E and six times more vitamin C than mature red cabbage. Similarly, cilantro microgreens had three times more beta-carotene than mature cilantro (Micro Greens Farmer) (Microgreens Guru).
